Summer. It's hot, It's cold. It's Colorado. Fruits and vegetables picked fresh from the local farmer's markets are one of the best ways to enjoy the summer. Plucking from your own garden's first harvests--there's nothing better!
Here is one of my most favorite summertime recipes.
Yummo Fruit Salad:
The sauce:
Two squirts (from a tube) of ginger root
2T of local honey
3T of fresh lemon juice
3T of mandarin orange juice
The zest of both, to taste.
1t poppy seeds
The fruit:
1 mango, chopped
1 banana, sliced
1 mandarin orange cut up
1/2 a pinneapple, dressed, then cut up
1 ripe pear, peeled and cut up
1 large bunch of black grapes, plucked and halved
1 pint of strawberries, sliced
2-3 kiwis, peeled and sliced
1/2 papaya, peeled and diced
1 star fruit, peeled sliced
1/2 cup freshly grated coconut (optional)
(exciting additions: Bacardi-coconut flavored, honeydew, watermelon, cantaloupe
Chill for at least 2.5 hours. Enjoy!
